OLEORESINS

Paprika (capsicum annuum) oleoresin is the homogeneous and concentrated liquid extract obtained in the form of oil with medium viscosity, an intense red colour and the mild flavour typically found in paprika. It is very fluid at room temperature, making it easier to use. As this is an extract of paprika essential oils, it is very fat soluble and is not water soluble.

It contains natural antioxidants and a variety of essential oils to improve colour stability in the finished product.

 

It is used as a natural food colouring to give an intense red colour to food at the liquid or viscous stage, partly replacing paprika and improving the texture and palatability of the finished product.
